Terroir, the French word for land, refers to the characteristics brought about in food as a result of the unique environmental factors that effect the phenotype of that food. In this chocolate covered workshop, participants learned how farming and microbial fermentation contribute to the unique terroir of single origin cacao from the Dominican Republic, Madagascar, Ecuador and Belize. The workshop was infused with mindful eating practices of feeding fellow participants delicious, high-quality dark chocolate and unprocessed cacao beans sourced from the San Francisco Bay Area's finest bean-to-bar chocolate makers, Endorfin Foods and Firefly. - Assessing Student Food Security at the University of California
